I was recently given the opportunity to try Bush’s new product, Hummus Made Easy. The name says it all – it is a way to make delicious hummus at home in a super easy way. I tried the hummus and fell in love! It was really easy to make, VERY tasty, and had ingredients that made me feel good about feeding it to my son (olive oil, tahini, garlic, and lemon juice is the base). I had already tried a more traditional Roasted Red Pepper Hummus Dip. I had also tried out some Garlic Hummus Pastry Puffs. This time, I wanted to try something that was a bit more of a comfort food.

Mexican Pizza!

I know this isn’t your “traditional” comfort food. However, I chose it because it reminds me of my great-grandmother. She used to love Mexican pizza. Mexican Pizza, as you know, often includes a slathering of refried beans, so I thought that hummus (which is made from either garbanzo beans or black beans) would be the perfect substitute. As I often remind people, I am not a chef – I just love food. So feel free to play around with the recipe until it is just the way you and your family like it. 🙂

As you can see, I used one pouch of Bush’s Southwest Black Bean Hummus Made Easy, one 15 ounce can of Bush’s Black beans, tortillas, ground beef (the leaner, the better), a yellow onion, shredded cheese, sour cream, and chopped green onions. I also used diced tomatoes, but they didn’t make it into this picture.

Directions
1. Brown and season ground beef (I used taco seasoning, salt, and pepper)

2. Make the hummus according to the package

3. Fry tortillas in oil (I used coconut oil) until they start
turning golden brown and are a bit crispy

4. Put thin layers of hummus and ground beef on bottom tortilla

5. Put other tortilla on top and then top it with cheese, diced tomatoes, and diced onions

6. Heat in oven or microwave until cheese melts

7. Top with sour cream and green onions

8. Enjoy!
