hummus cups

Now, I don’t claim to be a chef. Not by any means. However, I do enjoy experimenting in the kitchen. I have mentioned a few times that one of my favorite snacks is hummus. However, I never really understood just how versatile it is. It can be used as a dip (which is how I normally ate it), as a spread, and as an accompaniment to a lot of different dishes. When I was invited by the Kendal King Group to participate in a #SoapBoxInfluence campaign for Bush’s New Hummus Made Easy product line, I decided that I wanted to do more than just make the traditional hummus dip. So I looked for ways I could use the hummus in other recipes.

The first thing I tried (other than the traditional dip) was these Garlic Hummus Pastry Puffs. I think these are perfect for parties or small social gatherings. c

They might look a little fancy, but they were so easy to make!

First, you need to get a pouch of the original Hummus Made Easy and a 15 oz can of garbanzo beans. You can find both in the canned bean section at Walmart. While you’re there you can also pick up some pastry puffs (I got mine from the freezer section), some minced garlic (if you don’t already have some at home), and some of your favorite veggies (I used sweet peppers, cucumbers, and grape tomatoes).

Step One: Make the hummus. To do this, you simply add the can of beans (drained and rinsed), the pouch of Hummus Made Easy, and some minced garlic to a food processor and blend it to the desired consistency.

Step Two: Prepare the pastry puffs as directed on the package.

Step Three: Spoon a bit of hummus into each pasty puff.

Step Four: Top with slices of your favorite veggies.

Step Five: Enjoy!

So easy, right?! Plus, it’s healthy (made with olive oil, tahini, garlic, and lemon juice) and tasty!

And there are so many other ways you can use the Hummus Made Easy. You can check out these posts where I made Roasted Red Pepper Hummus Dip and Mexican Pizza. You can also find more recipes at www.hummusmadeeasy.com

I am a 29 year old single mommy to a beautiful boy born in October 2010. In addition to this awesome role, I also have a home-based business and am a freelance writer. All with the goal of being able to stay at home with my son. No 9 to 5 for this mama! I am weeks away from obtaining my Master's in Educational Psychology and hope to obtain a teaching position at some point in the future. Preferably online. Lol. I also plan to homeschool my son.

I'm pretty laidback (seemingly shy even) but only when you first meet me. After getting to know me, the truth is revealed that I am awkward, goofy, have a sometimes morbid sense of humor, love laughing and making people laugh, and have a sincere hatred of any type of dishonesty or intolerance. With that being said, I am a Christian and give all the glory for EVERYTHING to God.
